Daniel Fast: Dinner Day 1

Thank you for visiting Mrs. Lady Renaissance. My family and I began the Daniel Fast yesterday and I thought I would share the dinner we had for the first day.

We made:

Brown Rice

Black Beans

Vegan Carne con Chile (zucchini, mushrooms, broccoli) in a green Chili.

Molcajete

Whole wheat tortillas.

Brown Rice:

1 cup of rice, 2 cups of water in a rice cooker.

Black Beans:

Black beans, water, cumin, salt, turmeric.

Vegan Carne con Chile:

1-Zucchini cut into squares

1-Small package of mushrooms cut into slices

1-Crown of Broccoli

10- Tomatillos

A small handful of cilantro

1/4 of onion

2-Cloves of Garlic

Salt to desired taste

First, I cook the mushrooms with olive oil. Once I see they are turning brown, I add garlic with a garlic press and salt. I then cut and add the broccoli, and cut and add the zucchini. I cut mine into smaller pieces. Once I see they cook to how I like them, 4-5 minutes, I add the green chili.

To make the chili, I put the tomatillos to roast on a cast iron skillet. I also add 3 Serrano chili’s, but I won’t use these for my chili because my son doesn’t like it, but you can if you want to. Once the tomatillos are cooked, add them to your blender, add the garlic, cilantro, onion, salt, and water. Then add it to the pan. Let this simmer until the veggies are as you like.

Molcajete:

3-Roasted Serranos

2-Semi Roasted Garlic Cloves

A ring of onion cut into squares

A small hand full of cilantro

3-Tomatillos

1-Avocado

Salt to desired taste

To make the molcajete, begin by adding your salt to the molcajete. Then, add your garlic and begin mashing this until desired consistency. Add the onion and mash until desired consistency. Add your Serranos, then your tomatillos, then hour avocado and cilantro.

Whole Wheat Tortillas:

2.5 cups of whole wheat flour

1.5 cups of warm water

1 tsp of salt

2 tablespoons of Olive Oil–Optional

How to serve:

I served the beans on one side, brown rice on the other side, and the vegan carne con chile on top.
