Recipe: Grated Raw Carrots with a Twist

My kids enjoy eating chili-lemon chips and since I limit their junk food consumption, I’ve had to find an alternative to quench their cravings. A doctor recently told a friend of mine to stop giving her kids Flaming Hot and Takis chips because he believed it was the cause of an ulcer and the stomach pains her kid was experiencing. Of course, I’ve also heard that chicken nugget binders create ulcers as well. With that said, I am very picky with the food my kids eat, although I do allow the occasional bad food. Since they still like chili-lemon style snacks I’ve decided to treat them with grated carrots lightly sprinkled with Tajin and a squeeze of lime or lemon. The Tajin is on occasion and is free of MSG. This snack is a success with them and even has the adults in the family asking for a bowl. . .or two. You, too, can achieve it in three easy steps.

Step 1: Grate the raw carrot.

Step 2: Squeeze the lemon. I used half of a lime for two organic carrots.

Step 3: Sprinkle some Tajin.
