As the days get colder, I love cooking warmer foods like my green chicken pozole. It is so simple and it is fast, unlike the pork version–although I do love the pork version as well. Pozole is comfort food for my family therefore, pushing me to make it during the weekend. Doesn’t it look delicious?
There are so many versions you can find online and, although I tweaked my family’s version, it is still delicious. My mom toasts pepitas then blends them in with the tomatillos and cilantro, but I always forget to purchase the seeds, so, I–at times–omit that aspect and add cumin to my recipe. I also make a spicy serrano chili sauce on the side to add heat to the dish. You can eat this with tostadas and avocado for added goodness. If you are interested in the recipe, let me know.
